The M.2 HATs are missing the optional 32kHz clock which most models of SanDisk controller require.
that might be a batch issue!
Can only repeat again that I'm running WD and SanDisk NVMe - which all have SanDisk controllers - just fine on CM4IO baseboards. They don't have 32kHz clock there as well!
'Avoid' List. We've had problems or reports of problems.

Kingston OM8SEP4256Q-A0
Transcend 110Q (TS500GMTE110Q)
WD Green/Blue/Red/Black not in the above list. Variable results or not working because of quirks of a SanDisk controller/firmware. Our SN350 and SN570 prevented the RPi 5 from booting at all especially.
I have two SN350's working on CM4 btw.
