The problem seems to be that the commonly available M/F standoffs have only 6mm of thread on the stud, which is insufficient to go through the case and PCB.

My suggestion would be to buy some M2.5 F/F standoffs of the desired length (20mm?) and some M2.5 grub screws. Longest grub screws I found so far is 16mm. Insert the grub screws into the standoffs with some Loctite, epoxy, or cyanoacrylate, leaving 8mm protruding. Now you have a 20mm M/F standoff with 8mm threaded stud.

Alternatively, buy some M2.5 threaded rod and cut it to the desired height of the stack. Drop the Pis onto the rod, then screw an F/F standoff all the way down the rod. Drop another Pi onto the rod, then another standoff. Repeat for the full stack.

Basically, get creative.
