Hi raccoon396,

1. Yes it is fine be sure that you connect all the 0V to gnd.
You will need an terminal block because you will have three 0V wires from your sensor and the 3 resistors which will convert the 4..20ma to 3.3v.
This is six connections to the GND connector on the shield this is why a terminal block is needed!
For the resistor I will use 20ma to be 3V , 3V/20ma = 150Ω since at 3.3V your range is VCC+0.3V .
I will also set the range to 4.096V.

2. Only the I2C gpio are used. If you look at the picture of the shield all other gpios are available.
