HATs and other add-ons • How to select specific drive to boot from

Hi people.
I am hoping that you smarter people have the answer for me as I have hit a wall with all my Google searches/Youtube vids, all are just telling me how to boot from NVME. I have that working fine. Or how to change boot order.

My setup is
Pi5 8GB
U2500 M.2 NVMe & dual 2.5G ethernet for Raspberry Pi 5 with 250GB M2 drive with Ubuntu 24.04 running.
That works fine.

I then added the following
HatBRICK! Commander (2 ports, GEN 2) for Raspberry Pi 5
Raspberry Pi5 PCIe to M.2 NVMe SSD Adapter Board C HAT Pi5-PCIe-2280-2242-2230
M.2 NVME PCI-E PCIE X4 X8 X16 To 6 Port 3.0 SATA Adapter Card Riser ASM1166 Chassis - I have 6 SATA drives plugged into this.

Now the situation is that when I do not have the NVMe to SATA plugged in the Pi5 will boot fine. As soon as I plug the NVMe to SATA in the Pi5 never boots and the activity lights on the SATA adapter constantly flash.
But if I boot from SD card then all drives will show up fine and be accessible.

I am hoping that someone can tell me how to change the boot device not just the boot order. Or if it is the boot order then what would I need to change. I would like to boot from the NVMe only.
