What are the reasons I should NOT connect to the GPIO pins?
RS232C signal voltages are often well outside what the GPIO pins can tolerate and the signal polarity is inverted to what a Pi UART usually expects, though I don't know how that is for the Pi 5.

You would need to use a MAX3223 or similar interface chip.
Anyone have suggestions for a HAT I can order?
No. I would suggest a USB-to-DB9 adapter cable.
